There s no getting around safety in the kitchen. There are certain safety guidelines that are sacrosanct; compromising on these ground rules puts your whole family s health at risk.

Before we get to the guidelines regarding certain types of foods, here are the 3 main rules that apply across the board to all types of foods:

1. Shop Wisely: Only purchase those foods that look and smell good.

2. Keep Meats & Veggies Separate: Blood and fluids that drip from the meats onto the veggies can spoil the vegetables and cause food poisoning.

3. Store Perishable Food Immediately: If you are planning on buying perishables such as dairy products, frozen foods or meats, plan on going home directly from the store or remember to carry a cooler bag to prevent spoilage.

Now on to the specifics:

Safety Guidelines For Meats

Salmonella and E.coli are the primary concern for all meats including beef, lamb and poultry. The danger zone where growth is rampant is between 40 F and 140 F. The growth of the bacteria is slowed by refrigeration and freezing- the lower the temperature the slower the growth of bacteria. Interestingly, these bacterial live only on the surface of the meat- they do not live inside the muscle fibers. This means, as long as you cook the exterior of a whole cut of meat such as a steak or a chicken breast, it is safe to eat.

It is best to avoid roasting meats at very low oven temperatures. This is because when meat is cooked at such low temperatures, it lingers on too long in the danger zone.

Safety Guidelines For Vegetables

It does not really cross our mind but vegetables and fruits can also be contaminated with bacteria such as salmonella and E.coli when waste from nearby animal farms gets washed by the rain onto the plants. While cooking is the best way to kill any bacteria that may be present on some of the vegetables, for fruits and vegetables that are eaten raw, washing thoroughly is very important. Hard skinned fruit should be lightly scrubbed to remove surface dirt and bacteria. For leafy vegetables, it is best to remove the outer layers before washing. To maintain freshness and retain the nutrients, it is best to wash fruits and vegetables only just before you use them. Throw out any uncooked, peeled or cut produce that is left out at room temperature for over 2 hours.

Dairy

Milk, which is pasteurized and refrigerated is generally safe. Refrigeration is not necessary for hard cheeses such as Swiss Cheese , Cheddar, Monterey Jack and Parmesan but soft cheeses are best kept refrigerated to prevent growth of bacteria.

Eggs

Salmonella rears its ugly head with eggs too and the only way to get rid of it is by cooking the egg completely, till it is firm. Unfortunately, there are several everyday egg dishes that are not cooked enough to kill the salmonella. While it is estimated that only 1 in 20,000 eggs contain salmonella, it is not worth the risk especially for people whose immune systems are more fragile such as young kids, pregnant woman and the elderly.

Manitoba volunteers go to war against Red River flooding

Over 1,600 volunteers registered to help build approximately 65,000 of the 500,000 sandbags to create dikes 20.5 feet (6.2 meters) high to protect the City of Winnipeg, Manitoba in the war against the Red River of the North flood.

700 volunteers answered at the rural municipality of St. Andrews alone. Once sandbags are filled for West St. Paul, St. Andrews, and Selkirk, then frozen culverts must be cleared.

The height of the river is expected to be Thursday, and predictions are that it will be less than Flood of the Century of 1997. There is no precipitation in the forecast, and snow in the province should be melted by the end of the week.

“The fear right now is we have to get that ice out of the river. The Amphibex [Excavators] are still working and breaking the ice apart, and everyday we buy with the warm weather and the current, it is thinning the ice down a bit, so when it does start to move, the better chance it’ll move right out into the lake,” said Paul Guyder, the emergency coordinator for the RMs of St. Andrews and St. Clements.

“I feel that we’ve done everything humanly possible to get ready,” said Gary Doer, Premier of Manitoba, “But … there are fallibilities with human behaviour. We can take every preventative measure as human beings possible and we can still get Mother Nature proving again she is superior.”

Communities with ring diking will partially or fully close their dikes at the beginning of the week. Provincial officials are considering opening the Red River Floodway gates around mid-week before ice is fully melted.

Ice jams could cause flooding within the city, however opening the gates could spare neighbourhood flooding when the river rises to the estimated 6.3 meters (20.7 feet) height. The province does have back up plans for dealing with ice jams within the city if they do occur. The unpredictability of ice jams and the ensuing water level rise may cause neighbourhood flooding. The city is raising dikes where the river has jammed with ice in the past such as on tight curves and past bridges. Likewise there are excavators and backhoes positioned at these points.

Vulnerable neighbourhoods on the river banks have been reinforced with sandbag dikes at vulnerable areas from the massive volunteer effort over the weekend. Guyader feels no more extra volunteers are needed, however volunteers are still being asked to leave their names and number in case of unpredicted need. Existing personnel will assess roads, and help with clean up.

Approximately 400 of the 800 people who evacuated the Roseau River Anishinabe First Nation have returned to their homes.

Former Premier, Dufferin Roblin, brought forward the floodway as a protection for Winnipeg residents and economy following the 1950 Red River Flood. The Red River floodway, “Duff’s Ditch” was finally finished in 1968, and its floodway gates have been opened 20 times saving Winnipeg from an estimated CA$10 billion in damages. The floodway expansion began in 2005 at a price of $665 million.

Polish and Chinese experts have come to survey the Red River Floodway, and Dennis Walaker, mayor of Fargo, North Dakota recognises the need for Red River flood defences down river. “Every town that you drive by from the Canadian line up to Winnipeg is either elevated or ring-diked,” said Walaker.

Honda recalls fire risk cars

Honda have issued a recall for 646,000 cars around the world due to a potential fault that could cause a fire. The recall involves the ‘Jazz’ range of cars, which is known by its alternative name, Fit, in some countries.

Three incidents involving the problem, caused by a defective master switch, have been reported worldwide, two in the US and one in South Africa. In September 2009, Vanilla Nurse, a two-year old girl, was sleeping in one of the models, when the hatchback in Cape Town caught fire. Following the accident, Honda “launched an extensive investigation to determine the cause of the incident,” according to a statement issued today. Although they could not isolate the cause of the fire, “the investigation has shown that water intrusion into the power window switch housing may in some instances cause a short circuit, which in exceptional circumstances may lead to potential damages”.

Just 10% of cars are expected to need new switches. The remainder will need a waterproof skirt in order to keep water out.

Rival Toyota was forced to recall vehicles on Thursday, citing floor mats that may stick accelerator pedals to the floor. There are fears that Toyota may have to widen their recall to cover up to eight million cars.

2020 Melbourne Lord Mayor candidate Wayne Tseng answered some questions about his campaign for the upcoming election from Wikinews. The Lord Mayor election in the Australian city is scheduled to take place this week.

Tseng runs a firm called eTranslate, which helps software developers to make the software available to the users. In the candidate’s questionnaire, Tseng said eTranslate had led to him working with all three tiers of the government. He previously belonged to the Australian Liberal Party, but has left since then, to run for mayorship as an independent candidate.

Tseng is of Chinese descent, having moved to Australia with his parents from Vietnam. Graduated in Brisbane, Tseng received his PhD in Melbourne and has been living in the city, he told Wikinews. Tseng also formed Chinese Precinct Chamber of Commerce, an organisation responsible for many “community bond building initiatives”, the Lord Mayor candidate told Wikinews.

Tseng discussed his plans for leading Melbourne, recovering from COVID-19, and “Democracy 2.0” to ensure concerns of minorities in the city were also heard. Tseng also focused on the importance of the multi-culture aspect and talked about making Melbourne the capital of the aboriginals. Tseng also explained why he thinks Melbourne is poised to be a world city by 2030.

Tseng’s deputy Lord Mayor candidate Gricol Yang is a Commercial Banker and works for ANZ Banking Group.

Currently, Sally Capp is the Lord Mayor of Melbourne, the Victorian capital. Capp was elected as an interim Lord Mayor in mid-2018 after the former Lord Mayor Robert Doyle resigned from his position after sexual assault allegations. Doyle served as the Lord Mayor of Melbourne for almost a decade since 2008.

Serve chilled with honey mustard or a sweet style vinaigrette.

An amazing fruit salad, popular in parts of Latin America is made using strawberries, mango, melon, sliced bananas, grapes, sliced oranges, sliced apple, and sliced pear. You can adjust the types and variety of fruits to fit your taste. Mix all the fruit pieces in a large decorative bowl and generously drizzle with sweetened condensed milk. Add caramelized almonds if desired.

A fabulous spinach dip that can be served at baby showers is really easy to make! The dip can be served with both corn chips and crackers. The recipe calls for 1 1/2 cups of real mayo (you can use light mayo if preferred), 1/2 cup of softened cream cheese, 1 package of frozen spinach (cooked and drained), 1/2 cup chopped green onion, 1/2 teaspoon of salt, 1/2 teaspoon of pepper, and parsley to taste. Combine all ingredients and serve warm. If desired, you can melt Mozzarella or Parmesan cheese over the dip before serving. Provide an assortment of crackers and crunchy corn chips to eat the spinach dip with.

Several police officers killed in suicide bombing in Afghanistan

At least five to ten police officers in Afghanistan have been killed and at least 11 others were wounded after a suicide bombing in the southern part of the country in the town of Spin Boldak at a checkpoint.

Police officers were having lunch inside a room at the checkpoint when the bomber, who was also dressed in a police officer’s uniform, walked in and detonated his explosives. At least two rooms were destroyed, according to police.

“We were eating lunch around 1330, when a suicide attacker wearing police uniform entered the post and blew himself up,” said Bismillah Khan, commander of the local police in Spin Boldak who could only confirm that “five border police are killed and 11 are injured.”

No one has claimed responsibility for the attack.

French Workers stay at home for Whit Monday

In France, workers by the millions stayed at home during the Whit Monday holiday despite the government’s cancellation of the traditional Pentecost public holiday. Some acted in defiance of the government’s decision, while some took leave or were put on forced leave by their employers due to uncertainties of public transportation.

Following the 2003 heat wave, which caused the deaths of an estimated 13,000 elderly people in France, the administration of prime minister Jean-Pierre Raffarin has proposed the suppression of one day of public holiday in order to use the supplemental generated tax for a fund for the caring of the elderly.

Whit Monday was selected because, in normal years, France has several public holidays in May. Furthermore, attendance of religious celebrations is low, so holidays of a religious origin are nowadays generally mere family reunions.

However, the reception of this new working day was mixed. The administration says it promotes solidarity with the elderly. Trade unions and opposition groups argue that the measure is an ill-conceived stunt aimed at hiding the government’s bad handling of the problems of the elderly.

For instance, many remember that in 1956, the government created a tax (the vignette) on motor vehicles, allegedly for funding measures for the elderly. But in 1973, the products of this tax came, as any other tax, into the government’s general fund.

With this measure, the French government intends to raise 2 billion to be donated to a new public establishment, the “national fund for solidarity for autonomy.” The new fund would be chartered to deal with losses of self-sufficiency of elderly or handicapped people. 1.2 billion € are earmarked for elderly people, 0.8 for the handicapped.

Trade unions had called for strikes in urban public transportation and paralyzed traffic in 27 cities, including Clermont-Ferrand, Lille, Montpellier ou Strasbourg. However, SNCF (the national railway operator) did not strike and RATP (the Paris transportation authority) suffered only minor disturbances, though both are normally known for their frequent and disturbing strikes.

SNCF considered the day as a holiday for payroll purposes and instead increased the work day by 1’52”, a measure that majority leader Nicolas Sarkozy considered shocking and contrary to the objectives of the government.

The protests are also widely considered to be motivated by the unpopularity of the administration of president Jacques Chirac and prime minister Jean-Pierre Raffarin. Recent statistics show a five year-high for unemployment at 10.2%.

This discontent may result in a majority of “no” in the vote for the ratification of the Treaty establishing a Constitution for Europe.

Creator of website satirizing Glenn Beck on winning domain name case

Wikinews interviewed the creator of a parody website satirizing American political commentator Glenn Beck, about his thoughts after prevailing in a domain name dispute brought by Beck before the World Intellectual Property Organization (WIPO) in Geneva, Switzerland. Florida resident Isaac Eiland-Hall created the website in September, and it asserts Beck uses questionable tactics “to spread lies and misinformation”. Eiland-Hall was represented in the case by free speech lawyer Marc Randazza.

Dollar General chain in US recalls sunglasses, toy cars

Dollar General is the latest American company to recall unsafe Chinese-made products. All products affected by the recall contain “excessive amounts of lead” in the yellow paint.

The U.S Consumer Product Safety Commission has just recalled “pull and release” toy cars, as well as yellow children’s size sunglasses.

Products affected are:

  • a four pack of Super Wheels (UPC #400016576344)
  • a two pack of Super Racer cars (UPC # 883788965002, 380000)
  • “Time to Play Every Day” Fashion Sunglasses (UPC #400007860896, 51,000 units)

The car toys were sold at the chain’s stores from April through October; the glasses were sold from March 25 through to October 2007.

Affected products should be taken from children immediately. Dollar General will provide full refunds on return.

The Goodlettsville, Tennessee-based price-point retailer chain had 8205 stores, as of June this year.
